Environmentally friendly and sustainable method.
Growing instructions
Preparing the sugar water mixture :
Use bottled mineral water to avoid contaminants like chlorine.
Add about 10% apple or lemon syrup without preservatives (glucose/fructose).
Mix 10 ml of mycelium per liter of sweetened water (for example, 15 ml for a 1.5 liter bottle).
Shake gently to distribute the mycelium well.
Development of mycelium :
Place the mixture in a dark room, at a stable temperature of at least 20°C.
Let it rest for 4 to 5 days until the mycelium filaments develop and the liquid becomes cloudy.
Substrate inoculation :
On the logs :
Use freshly cut hardwood logs. Drill holes 3 cm deep every 15 cm on the surface of the logs.
Fill the holes with the mycelium mixture, then seal with food-grade wax or beeswax.
Place the logs in a shady place, partially buried to maintain moisture.
On other substrates :
Fill a plastic bag or an aerated container with the chosen substrate (straw, coffee grounds, sawdust, etc.).
Pour the mycelium mixture onto the moistened substrate and mix well to distribute evenly.
Substrate incubation :
Place the inoculated substrate in a dark and humid place, with a temperature between 20°C and 25°C.
Wait approximately 2 to 3 weeks for the mycelium to completely colonize the substrate or logs.
Fructification :
Change the environmental conditions to trigger fruiting :
Lower temperature (15-20°C).
Moderate indirect light.
High humidity (85-90 %), carried out with a humidifier or by spraying regularly.
Shiitake mushrooms start to grow on the logs or in the substrate bags after an additional 2 to 3 weeks.
Harvest :
Harvest the Shiitakes when their caps are well-formed and still slightly convex.
The logs can produce Shiitakes for 2 to 3 years, with several fruiting cycles per year.
Seasonality and harvest
Inoculation : Spring or early autumn, when the climatic conditions are mild and humid.
Expected fruiting : Shiitake mushrooms can produce mushrooms for 2 to 3 years on logs, with several harvest cycles per year.
